Ingredients
– 4 medium sweet potatoes
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 cup shredded cheddar cheese
– 1/2 cup cooked and crumbled bacon
– 2 tablespoons chopped green onions
– 2 tablespoons sour cream (optional)
Instructions
1. Preheat your oven to 425°F (220°C).
2. Peel and cut the sweet potatoes into thin fries, about 1/4 inch thick.
3. Toss the sweet potato fries with olive oil, garlic powder, paprika, salt, and pepper. Spread them out on a baking sheet in a single layer.
4. Bake for 25-30 minutes, flipping halfway, until the fries are crispy and golden.
5. Remove from the oven, sprinkle with shredded cheddar cheese, crumbled bacon, and green onions.
6. Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
7. Serve immediately with a dollop of sour cream if desired.
