Base Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
Optional Add-Ins
- 1/4 cup dark chocolate chips
- 1/4 cup chopped walnuts or almonds
- 2 tablespoons dried cranberries or raisins
- 1 tablespoon chia seeds or flaxseeds
- A pinch of salt
Instructions
- Preheat Your Oven:
Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat. - Mash the Bananas:
In a large mixing bowl, mash the ripe bananas with a fork until smooth. The consistency should resemble a thick puree. - Mix the Ingredients:
Add the rolled oats, vanilla extract, cinnamon, and honey (if using) to the mashed bananas. Stir until everything is well combined. If you’re adding any optional mix-ins like chocolate chips, nuts, or dried fruit, fold them into the batter at this stage. - Form the Cookies:
Using a spoon or cookie scoop, drop spoonfuls of the batter onto the prepared baking sheet. Flatten each cookie slightly with the back of the spoon to create an even shape. - Bake the Cookies:
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are lightly golden and the cookies are firm to the touch. - Cool and Serve:
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store for later!
