Ingredients
– 1 lb ground beef (or ground turkey for a leaner option)
– 1 can (15 oz) kidney beans, drained and rinsed
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (15 oz) pinto beans, drained and rinsed
– 1 can (14.5 oz) diced tomatoes
– 1 cup frozen corn
– 1 small onion, diced
– 3 garlic cloves, minced
– 2 cups beef or vegetable broth
– 2 tbsp tomato paste
– 1 tbsp chili powder
– 1 tsp cumin
– 1/2 tsp smoked paprika
– 1/2 tsp cayenne pepper (optional)
– Salt and pepper to taste
Instructions
1. In a large pot over medium heat, cook the ground beef until browned. Remove excess grease if necessary.
2. Add diced onion and garlic to the pot and sauté until softened. Stir in tomato paste, chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper.
3. Add diced tomatoes, beans, corn, and broth. Stir to combine and bring to a boil.
4. Reduce heat to low and simmer uncovered for 25-30 minutes, stirring occasionally. Adjust seasoning if needed.
5. Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro if desired.
