Ingredients
– 1 lb ground beef
– 1/4 cup breadcrumbs
– 1 egg
– 1/4 cup grated Parmesan cheese
– 1 tsp garlic powder
– 1 tsp onion powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 2 cups sliced mushrooms
– 1 cup diced carrots
– 2 cups beef broth (non-alcoholic)
– 2 tbsp flour
– 2 tbsp butter
– 6 large potatoes, peeled and cubed
– 1/2 cup milk
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C). Mix ground beef, breadcrumbs, egg, Parmesan, garlic powder, onion powder, salt, and pepper. Form into meatballs and bake for 20 minutes.
2. While the meatballs cook, melt butter in a skillet and sauté mushrooms and carrots until tender. Sprinkle flour and stir for 1-2 minutes.
3. Slowly whisk in beef broth to create a smooth gravy. Simmer until thickened, then add meatballs to the sauce.
4. In a separate pot, boil potatoes until tender. Mash with milk, salt, and pepper until creamy.
5. Serve the meatballs and mushroom gravy over mashed potatoes. Garnish with parsley.
