For the Salad:

  • 2 large boneless, skinless chicken breasts
  • 4 cups mixed salad greens (such as romaine, arugula, and spinach)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 4 slices paleo-compliant bacon, cooked and crumbled
  • 3 hard-boiled eggs, peeled and quartered
  • 1/2 red onion, thinly sliced

For the Avocado Dressing:

  • 1 large avocado
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp water (or more for desired consistency)
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

Step 1: Marinate and Grill the Chicken

  1. In a small bowl, combine olive oil, lemon juice, Italian seasoning, salt, and pepper. Pour the marinade over the chicken breasts and let them marinate for at least 15-20 minutes (optional but recommended for flavor).
  2. Preheat a grill or grill pan over medium heat. Grill the chicken breasts for 5-7 minutes per side, or until they are fully cooked and have nice grill marks. Set aside to rest, then slice into strips.

Step 2: Prepare the Salad Ingredients

  1. Arrange the salad greens in a large serving bowl or platter.
  2. Place the diced avocado, cherry tomatoes, cucumber, crumbled bacon, hard-boiled eggs, and red onion on top of the greens in rows or sections for a classic Cobb salad presentation.
  3. Add the sliced grilled chicken on top.

Step 3: Make the Avocado Dressing
