Ingredients

  • 1/2 tablespoon olive oil
  • 2 cups spinach leaves (113 g / 1.4 lb)
  • A pinch of salt
  • 4 slices of sourdough bread
  • 2 tablespoons butter, softened at room temperature
  • 6–8 pieces sun-dried tomatoes (packed in oil), chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shredded cheddar cheese (or mozzarella cheese)
  • A pinch of oregano
  • A pinch of crushed chili flakes
  • Honey, optional for serving

Instructions

  • Sauté the Spinach:
    Heat the olive oil in a non-stick pan over medium heat. Add the spinach leaves and sauté for 5-6 minutes or until wilted. Sprinkle a pinch of salt, stir, and transfer the spinach to a plate. Wipe the pan clean with a paper towel.
  • Prepare the Bread:
    Spread butter on one side of each slice of bread. Place two slices of bread, butter side down, in the same pan.
  • Assemble the Sandwich:
    On each slice of bread, arrange the chopped sun-dried tomatoes and press down gently with a spoon to help them stick. Top with half of the crumbled feta cheese and half of the shredded cheddar cheese. Evenly distribute the sautéed spinach on top, followed by the remaining feta and cheddar. Sprinkle oregano and chili flakes over the top.
  • Complete the Sandwich:
    Place the second slice of bread on top of each sandwich, butter side up.
  • Cook the Sandwiches:
    Cook the sandwiches over medium heat for about 5 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and cook the other side for another 5 minutes, or until the bread is nicely toasted and the cheese inside is gooey and melted.
  • Finish and Serve:
    Remove the sandwiches from the pan and sprinkle with thyme or oregano and red pepper flakes (chili flakes), if desired. Optionally, drizzle a little honey on each sandwich for a touch of sweetness. Serve immediately and enjoy!
