For the Fritters:
- 4 cups finely shredded green cabbage (about 1/2 medium head)
- 1 medium carrot, shredded
- 3 scallions, thinly sliced
- 3 large eggs, lightly beaten
- 1/2 cup all-purpose flour
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 3–4 tbsp avocado oil or olive oil (for frying)
For the Dipping Sauce:
- 1/2 cup sour cream or plain Greek yogurt
- 1 tbsp sriracha or hot sauce (to taste)
- 1 tbsp lemon juice
- 1/4 tsp garlic powder
- Salt and pepper (to taste)
Instructions
- Prepare the Fritter Mixture:
- In a large bowl, combine the shredded cabbage, carrot, and sliced scallions. Add the lightly beaten eggs, flour, minced garlic, salt, pepper, and paprika. Mix until everything is well combined. The mixture will be wet but should hold together when scooped.
- Cook the Fritters:
- Heat 2 tablespoons of oil in a large skillet over medium heat.
- Scoop about ¼ cup of the cabbage mixture and place it into the skillet, flattening it slightly with a spatula to form 3-inch fritters.
- Fry for 3-4 minutes per side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil.
- Repeat the process with the remaining batter, adding more oil to the skillet as needed.
- Prepare the Dipping Sauce:
- In a small bowl, whisk together the sour cream (or Greek yogurt), sriracha or hot sauce, lemon juice, and garlic powder. Season with salt and pepper to taste.
- Adjust the seasoning and spice level according to your preference.
- Serve:
- Serve the warm cabbage fritters with the prepared dipping sauce on the side.
- Garnish with extra sliced scallions for a fresh, vibrant touch.
