Pie Dough:

  • 500g (4 cups) all-purpose flour
  • 250g (2 sticks + 2 tablespoons) cold butter, cubed
  • 1 ½ teaspoon salt
  • 1/2 cup + 2 tablespoons cold water

Chicken Filling:

  • 500g (2 medium breasts) chicken breast, cut into chunks
  • 1 handful of onions, chopped
  • 1 chicken cube
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 cup water
  • ½ teaspoon chicken seasoning
  • ½ teaspoon cayenne pepper (optional)
  • 1 ½ tablespoon flour
  • 1 ¼ cup water
  • Chopped vegetables (potatoes, bell pepper, carrots) – amount as desired
  • Chopped parsley (optional)

Egg Wash (optional):

  • 1 egg, beaten

Directions:

  1. Make the pie dough:
    • Combine flour and salt in a bowl.
    • Cut in cold butter using a pastry cutter or your fingers until the mixture resembles breadcrumbs.
    • Create a well in the center and add cold water. Mix with a fork until the dough just comes together. Avoid overmixing.
    • Wrap the dough in plastic and refrigerate for 30 minutes to 1 hour.
  2. Cook the chicken:
    • Season chicken with salt, onion powder, and chicken cube.
    • Add water to a pot and bring to a boil. Cook chicken for 15 minutes, or until cooked through. Shred the chicken.
  3. Prepare the vegetables:
    • Peel and chop vegetables (potatoes, bell pepper, carrots) into small cubes.
  4. Make the filling:
    • Heat oil in a pan and cook chopped onions and garlic for 2-3 minutes.
    • Add shredded chicken and cook for a few minutes.
    • Add chopped vegetables and seasonings (chicken seasoning, salt, cayenne pepper – optional).
    • Stir in flour and cook for 1-2 minutes.
    • Gradually whisk in water to thicken the filling.
    • Cook for 10 minutes, or until the vegetables are tender and the filling is thickened.
    • Stir in chopped parsley (optional).
    • Let the filling cool completely.
  5. Assemble the pies:
    • Preheat oven to 350°F (175°C).
    • Roll out the chilled dough on a floured surface.
    • Cut dough into squares or desired shapes.
    • Brush one side of the dough square with egg wash (optional).
    • Add a spoonful of filling to one side of the dough square.
    • Fold the dough over the filling and crimp the edges with a fork to seal.
    • Poke holes in the top of each pie with a fork to vent steam.
  6. Bake the pies:
    • Place the pies on a baking sheet lined with parchment paper (optional).
    • Brush the tops of the pies with egg wash (optional).
    • Bake for 35-45 minutes, or until golden brown.
