Stuffed Bell Peppers Recipe: A Delicious and Easy-to-Make Meal

Ingredients

– 6 medium bell peppers (any color)
– 1 cup cooked rice
– 1 lb ground chicken or turkey
– 1 cup shredded mozzarella cheese (plus extra for topping)
– 1/2 cup grated Parmesan cheese
– 1 small onion, finely diced
– 2 cloves garlic, minced
– 1/2 teaspoon paprika
– 1/2 teaspoon Italian seasoning
– Salt and pepper to taste
– Olive oil for cooking


Instructions

1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Arrange in a baking dish.
2. In a skillet, heat olive oil and sauté onions and garlic until softened. Add ground chicken or turkey, cooking until browned. Season with paprika, Italian seasoning, salt, and pepper.
3. In a large bowl, combine the cooked meat mixture with rice, mozzarella cheese, and Parmesan cheese. Mix well.
4. Stuff the bell peppers with the mixture, pressing gently to pack. Top with additional mozzarella cheese.
5. Cover the dish with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, or until the cheese is melted and golden.
6. Garnish with fresh herbs like oregano or parsley before serving.
