Ingredients

- 1/4 cup granulated sugar

- 1 tablespoon lemon juice
- 1 package mini phyllo pastry shells (or homemade if preferred)
- 1 pint fresh raspberries
- 2 tablespoons powdered sugar (for dusting, optional)
- Fresh mint leaves for garnish (optional)
Instructions
1. Preheat the Oven (if baking phyllo shells):
If you’re using store-bought mini phyllo pastry shells, you may not need to bake them, but if you prefer a crispier shell, preheat your oven to 350°F (175°C) and bake the shells for 5-7 minutes or until lightly golden brown. Allow them to cool completely before filling.
2. Make the Cream Cheese Filling:
In a medium-sized mixing bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and lemon juice using an electric mixer. Beat until smooth and creamy, about 2-3 minutes.
3. Fill the Phyllo Shells:
