Ingredients
– 1 lb chicken breast, cut into bite-sized pieces
– 1 cup panko breadcrumbs
– 1/2 cup grated Parmesan cheese
– 1 tsp garlic powder
– 1 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 2 large eggs, beaten
– 2 tbsp olive oil or cooking spray
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a lightly greased wire rack.
2. In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
3. Dip each chicken piece into the beaten eggs, then coat in the breadcrumb mixture. Press gently to adhere the coating.
4. Place coated chicken bites on the prepared baking sheet. Lightly spray with cooking spray or drizzle with olive oil.
5. Bake for 18-20 minutes, flipping halfway, until the chicken is cooked through and the coating is golden and crispy.
6. Serve warm with your favorite dipping sauce like ranch, honey mustard, or marinara.
