Ingredients
4 large eggs
1/4 cup milk
1 tablespoon butter
1/2 cup shredded cheddar cheese
1 avocado, diced
1/4 cup fresh cilantro, chopped
1 small jalapeño, diced (optional)
2 large flour tortillas
2 tablespoons olive oil or butter for grilling
Salt and black pepper, to taste
Instructions
1. In a bowl, whisk together eggs, milk, salt, and pepper.
2. Heat a skillet over medium heat and melt 1 tablespoon of butter. Pour in the egg mixture and scramble gently until fully cooked. Remove from heat.
3. Lay the tortillas flat and evenly divide the scrambled eggs, shredded cheese, avocado, cilantro, and jalapeño (if using) between them.
4. Fold in the sides of each tortilla and roll tightly into a burrito.
5. Heat olive oil or butter in a skillet over medium heat. Place the burritos seam-side down and cook for 2-3 minutes on each side until golden brown and crispy.
