Creamy Sun-Dried Tomato Chicken: A Rich and Flavorful Dinner

Ingredients

– 4 boneless skinless chicken breasts
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 1/2 cup sun-dried tomatoes, chopped
– 2 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/4 cup grated Parmesan cheese
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Fresh basil for garnish


Instructions

1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 6-7 minutes on each side, or until golden and cooked through. Remove and set aside.
2. In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes. Add spinach and cook until wilted.
3. Stir in heavy cream, chicken broth, and Parmesan cheese. Bring to a simmer and cook for 3-4 minutes until the sauce thickens.
4. Return the chicken to the skillet, spooning the sauce over the chicken. Simmer for another 3-4 minutes to combine the flavors.
5. Garnish with fresh basil and serve hot, perfect over pasta or with crusty bread.
