Instructions

  • Preheat the Oven:

  • Prepare the Spaghetti Squash:
    • Cut the spaghetti squash in half lengthwise. Remove the seeds using a spoon and drizzle the inside of each half with olive oil. Season with salt and pepper to enhance the flavor. Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 35-40 minutes, or until the flesh is fork-tender.
  • Sauté Mushrooms and Spinach:
    • While the squash is roasting, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Next, add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are golden brown. Stir in the chopped spinach and cook for an additional 2-3 minutes, until wilted.
