Ingredients
Italian sausage, sliced or crumbled (1 lb)
golden potatoes, diced (3 cups)
kale, chopped (4 cups)
chicken broth (6 cups)
heavy cream (1 cup)
onion, diced (1 medium)
garlic, minced (3 cloves)
olive oil (1 tablespoon)
paprika (1/2 teaspoon)
salt (1 teaspoon)
black pepper (1/2 teaspoon)
Instructions
1. Heat olive oil in a large pot over medium heat. Cook sausage until browned and fully cooked. Remove and set aside.
2. In the same pot, sauté onion and garlic until softened, about 3 minutes.
3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
4. Stir in cooked sausage, chopped kale, and paprika. Cook for an additional 5 minutes until kale wilts.
5. Lower heat and stir in heavy cream. Simmer for 2-3 minutes, then adjust seasoning with salt and pepper to taste.
6. Serve hot with crusty bread or rolls.
