Ingredients
– 16 oz gnocchi (store-bought or homemade)
– 2 tbsp olive oil
– 2 cups sliced mushrooms
– 3 cups fresh spinach
– 3 garlic cloves, minced
– 1 cup heavy cream (or plant-based cream)
– 1/2 cup grated Parmesan cheese
– 1/4 tsp red pepper flakes (optional)
– Salt and pepper to taste
Instructions
1. Bring a pot of salted water to a boil. Cook gnocchi according to package instructions, drain, and set aside.
2. Heat olive oil in a large skillet over medium heat. Sauté mushrooms until golden and tender, about 5-7 minutes. Add garlic and cook for 1 minute.
3. Stir in heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted. Season with salt, pepper, and red pepper flakes if using.
4. Add spinach and cooked gnocchi to the skillet. Toss until the spinach is wilted and the gnocchi is well-coated in the sauce.
5. Serve warm, garnished with additional Parmesan and a sprinkle of red pepper flakes.
