Ingredients
– 2 large chicken breasts, thinly sliced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 green bell pepper, sliced
– 1 medium onion, sliced
– 2 tablespoons olive oil
– 2 teaspoons chili powder
– 1 teaspoon smoked paprika
– 1 teaspoon ground cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon cayenne pepper (optional)
– Salt and black pepper, to taste
– 1 avocado, sliced
– 1 lime, cut into wedges
– 1/4 cup sour cream
– Fresh cilantro, for garnish
Instructions
1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
2. Add the chicken slices and season with chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Sauté until fully cooked, about 5-7 minutes, then remove from the skillet and set aside.
3. In the same skillet, heat the remaining olive oil and add the bell peppers and onion. Cook for 5 minutes or until they become tender-crisp.
4. Return the chicken to the skillet and toss with the cooked vegetables. Cook for an additional 2 minutes to combine the flavors.
5. Transfer the fajita mixture to a serving dish. Top with avocado slices, sour cream, fresh cilantro, and lime wedges.
Notes
**Tip:** Serve with warm tortillas, rice, or beans to make it a complete meal!
**Pro Cooking Tip:** For extra flavor, marinate the chicken in lime juice, olive oil, and fajita spices for 30 minutes before cooking.
