Ingredients
– 2 lbs ground beef
– 1 cup breadcrumbs
– 2 eggs
– 1/2 cup milk
– 1 small onion, finely chopped
– 1 tsp garlic powder
– 1 tsp paprika
– Salt and pepper to taste
– 1 cup shredded cheddar cheese
– 1/2 cup ketchup
– 2 tbsp brown sugar
– 1 tbsp Dijon mustard
– Fresh parsley for garnish
Instructions
1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
2. In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic powder, paprika, salt, and pepper until just combined.
3. Fold in half the shredded cheddar cheese, then shape the mixture into a loaf and place it into the prepared pan.
4. Bake for 40 minutes. Meanwhile, prepare the glaze by mixing ketchup, brown sugar, and Dijon mustard in a small bowl.
5. Remove the meatloaf from the oven, spread the glaze evenly on top, and sprinkle with the remaining cheddar cheese.
6. Return to the oven and bake for another 15-20 minutes, or until the cheese is melted and the meatloaf is cooked through.
7. Let rest for 10 minutes, garnish with fresh parsley, and serve.
