Ingredients
For the Muffins:
– 2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup sugar
– 2 large eggs
– 1 tsp vanilla extract
– 3/4 cup milk
For the Streusel Topping:
– 1/3 cup brown sugar
– 1/4 cup all-purpose flour
– 1/2 tsp cinnamon
– 3 tbsp cold butter, cubed
For the Vanilla Glaze:
– 1/2 cup powdered sugar
– 1-2 tbsp milk
– 1/2 tsp vanilla extract
Instructions
1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.
3. Cream butter and sugar together until fluffy. Beat in eggs, one at a time, then mix in vanilla.
4. Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
5. Divide the batter evenly into the muffin tin.
6. For the streusel, combine brown sugar, flour, and cinnamon in a bowl. Cut in cold butter until crumbly. Sprinkle over muffin batter.
7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Cool on a wire rack.
8. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled muffins.
