- 1 tbsp rice wine vinegar (optional)
For the Stir-Fry:
- 3 cloves garlic, smashed
- 1 tbsp cooking oil
- 1 medium zucchini, halved lengthwise and sliced
- 1 tbsp oyster sauce
- Ground black pepper (optional)
Instructions
- Prepare the Chicken:
- Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
- Add the marinade ingredients—cornstarch, soy sauce, sesame oil, sugar, and rice wine vinegar.
- Mix everything well, ensuring the chicken is evenly coated, and let it marinate for 30 minutes to absorb the flavors.
- Stir-Fry the Chicken:
- Heat 1 tablespoon of cooking oil in a wok or large pan over medium-high heat.
- Add the smashed garlic and stir for 30 seconds to release its aroma.
- Add the marinated chicken along with the marinade and stir-fry for about 2 minutes, or until the chicken is no longer translucent.
- Remove the chicken from the pan and set it aside on a plate, leaving any remaining sauce in the pan.
- Cook the Zucchini:
- If the pan is too dry, add a little more oil.
- Add the sliced zucchini and stir-fry for about 5 minutes, until it becomes tender but still slightly crisp.
- Finish the Dish:
- Return the chicken to the pan with the zucchini.
