For the Chicken:

  • 1 lb boneless chicken thigh, cut into bite-sized pieces

For the Marinade:

  • 1 tsp cornstarch
  • 1/4 cup light soy sauce
  • 1 tsp sesame oil
  • 2 tsp sugar (or honey)
  • 1 tbsp rice wine vinegar (optional)

For the Stir-Fry:

  • 3 cloves garlic, smashed
  • 1 tbsp cooking oil
  • 1 medium zucchini, halved lengthwise and sliced
  • 1 tbsp oyster sauce
  • Ground black pepper (optional)

Instructions

  • Prepare the Chicken:
    • Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
    • Add the marinade ingredients—cornstarch, soy sauce, sesame oil, sugar, and rice wine vinegar.
    • Mix everything well, ensuring the chicken is evenly coated, and let it marinate for 30 minutes to absorb the flavors.
  • Stir-Fry the Chicken:
    • Heat 1 tablespoon of cooking oil in a wok or large pan over medium-high heat.
    • Add the smashed garlic and stir for 30 seconds to release its aroma.
    • Add the marinated chicken along with the marinade and stir-fry for about 2 minutes, or until the chicken is no longer translucent.
    • Remove the chicken from the pan and set it aside on a plate, leaving any remaining sauce in the pan.
  • Cook the Zucchini:
    • If the pan is too dry, add a little more oil.
    • Add the sliced zucchini and stir-fry for about 5 minutes, until it becomes tender but still slightly crisp.
  • Finish the Dish:
    • Return the chicken to the pan with the zucchini.
    • Add the oyster sauce and sprinkle with ground black pepper (if desired).
    • Stir-fry everything together for another 2-3 minutes, until the chicken is cooked through and the zucchini is fully tender.
    • Remove from heat and serve immediately.
