Ingredients

– 1 lb ground beef
– 1 small onion, diced
– 2 cloves garlic, minced
– 4 cups beef broth
– 1 can (14.5 oz) diced tomatoes
– 1 can (8 oz) tomato sauce
– 1 teaspoon dried Italian seasoning
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 9 oz cheese tortellini (fresh or frozen)
– 2 tablespoons chopped fresh parsley


Instructions

1. In a large pot, cook ground beef over medium heat until browned. Add diced onion and garlic, cooking until softened (about 3 minutes). Drain any excess grease.
2. Stir in beef broth, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
3. Add the tortellini to the pot and cook according to package directions, typically 5-7 minutes, until tender.
4. Stir in chopped parsley and adjust seasoning if needed.
