Ingredients
– 4 cups frozen tater tots
– 1/2 lb breakfast sausage, crumbled
– 4 large eggs
– 1/4 cup milk
– 1 cup shredded cheddar cheese
– 1 medium tomato, diced
– 2 tbsp chopped chives
– Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C). Bake tater tots on a baking sheet until crispy, about 20 minutes, and set aside.
2. In a skillet, cook sausage over medium heat until browned. Remove and set aside.
3. In a bowl, whisk eggs with milk, salt, and pepper. Scramble the eggs in the same skillet until just set.
4. Arrange baked tater tots in the skillet and top with scrambled eggs, cooked sausage, and shredded cheese.
5. Place the skillet in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
6. Garnish with diced tomato and chives before serving.
