Ingredients

– 1 lb ground beef
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 packet taco seasoning
– 1 can (14.5 oz) diced tomatoes with green chilies
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup corn kernels (fresh, canned, or frozen)
– 4 cups beef broth
– 1 cup heavy cream
– 1 1/2 cups shredded cheddar cheese
– Salt and pepper to taste
– Fresh cilantro and diced tomatoes, for garnish


Instructions

1. **Brown the Beef:** In a large pot over medium heat, cook the ground beef with chopped onion and minced garlic until the beef is browned and the onion is softened. Drain any excess fat.
2. **Season and Simmer:** Add the taco seasoning, diced tomatoes with green chilies, black beans, corn, and beef broth to the pot. Stir well and bring to a simmer. Let it cook for 15-20 minutes, allowing flavors to meld.
3. **Add Cream and Cheese:** Reduce the heat to low, then stir in the heavy cream and shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
4. **Serve:** Ladle the soup into bowls, garnishing with fresh cilantro, diced tomatoes, and extra shredded cheese if desired.
