Cheesy Shepherd’s Pie with Bacon: A Comfort Food Classic

Ingredients

– 1 lb ground beef
– 1 small onion, diced
– 2 garlic cloves, minced
– 1 cup frozen peas and carrots
– 2 tbsp tomato paste
– 1 cup beef broth
– 2 tbsp all-purpose flour
– 3 cups mashed potatoes
– 1 cup shredded cheddar cheese
– 4 slices cooked bacon, crumbled
– 1 tbsp olive oil
– Salt and pepper to taste


Instructions

1. Preheat your oven to 375°F (190°C).
2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant, about 3 minutes. Add ground beef and cook until browned.
3. Stir in tomato paste and flour, mixing well. Gradually add beef broth and simmer until thickened. Stir in peas and carrots, and season with salt and pepper.
4. Transfer the beef mixture to a greased baking dish. Spread mashed potatoes evenly over the top.
5. Sprinkle shredded cheddar cheese and crumbled bacon over the mashed potatoes.
6. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving.
