Ingredients
– 1 pound ground turkey or beef
– 1 small onion, finely diced
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– Salt and black pepper to taste
– 4 cups mashed potatoes (prepared fresh or leftovers)
– 2 cups shredded cheddar cheese
– 1 cup frozen mixed vegetables (optional)
– 1/4 cup green onions, chopped
– 4 slices turkey bacon, cooked and crumbled
– 2 tablespoons butter
Instructions
. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. In a skillet over medium heat, cook the ground turkey or beef with diced onions and garlic until browned. Season with smoked paprika, salt, and pepper. Drain any excess grease.
3. If using mixed vegetables, stir them into the skillet and cook for an additional 2 minutes.
4. Spread the cooked meat mixture evenly in the bottom of the baking dish. Top with an even layer of mashed potatoes, spreading them gently.
5. Sprinkle the shredded cheddar cheese over the mashed potatoes. Add crumbled turkey bacon and green onions on top.
6. Dot the top with small pieces of butter for extra richness.
7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
8. Remove from the oven, let it cool slightly, and serve warm.
