  • 2 cups of corn (fresh, frozen, or canned)
  • 1/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 egg
  • 1 green onion, chopped
  • 1/2 cup grated parmesan or cheese of your choice
  • 1 handful of cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and fresh cracked pepper to taste
  • 1 tablespoon oil (for frying)
  • Sour cream or heavy cream (for garnish)

Instructions

  • Prepare the Batter:
    In a large mixing bowl, combine the corn, cornmeal, flour, smoked paprika, egg, parmesan (or your chosen cheese), chopped green onion, cilantro, and lime juice. Season with salt and pepper. Stir the ingredients together until well-combined. If the mixture seems too dry, add a small amount of water (1-2 tablespoons) to bring it together into a thick batter.
  • Heat the Oil:
    Heat 1 tablespoon of oil in a large skillet over medium heat. You want the oil to be hot enough for frying, but not smoking.
  • Cook the Fritters:
    Once the oil is ready, spoon the corn mixture into the pan, forming small patties. Flatten each spoonful slightly with the back of your spoon to ensure even cooking. Cook the fritters for about 4 minutes on each side or until they are golden brown and crispy.
  • Serve:
    Remove the fritters from the skillet and place them on a paper towel to drain any excess oil. Garnish with a dollop of sour cream or heavy cream and serve hot. Enjoy!
