For the Cabbage Rolls:

  • 1 Chinese cabbage (Napa cabbage) or regular cabbage
  • 2 oz (60g) quinoa (1/3 cup)
  • 6 fl oz (160ml) water (2/3 cup)
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup (125g) mushrooms, chopped
  • 1 small sweet potato, grated
  • 1/2 tsp Italian herbs
  • Salt to taste

For the Sauce (Optional):

  • 2 white onions
  • 2 oz (60ml) olive oil (1/4 cup)
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Blanch the Cabbage Leaves:
    • Blanch the cabbage leaves in boiling water for 10 minutes. Drain and set aside.
  2. Cook the Quinoa:
    • In a small saucepan, combine the quinoa and water. Bring to a simmer, cover, and cook for 15 minutes or until the quinoa is tender.
  3. Prepare the Filling:
    • In a lightly oiled pan, sauté the chopped onion and minced garlic over medium heat for about 3 minutes.
    • Add the chopped mushrooms and cook for another 5 minutes until the mushrooms are tender.
    • Add the grated sweet potato, Italian herbs, and salt. Mix well and cook over medium heat with the lid on for 10 minutes.
    • Add the cooked quinoa to the vegetable mixture and mix well.
  4. Assemble the Cabbage Rolls:
    • Place a spoonful of the filling in the center of each cabbage leaf. Wrap the cabbage leaf around the filling to form a cylinder shape.
    • Transfer the cabbage rolls to a lightly greased pan and cook over medium heat for 5 minutes on each side until golden brown.
  5. Make the Sauce (Optional):
    • Preheat the oven to 390°F (200°C).
    • Place the white onions in a baking dish, drizzle with olive oil, and season with salt and black pepper. Bake for 30 minutes until the onions are tender and golden.
    • Transfer the baked onions to a food processor, add olive oil and lemon juice, and blend until smooth and creamy.
  6. Serve:
    • Serve the cabbage rolls hot, drizzled with the optional onion sauce if desired.
