BBQ Meatball and Mashed Potato Bake: A Comfort Food Classic

Ingredients

– 1 lb ground beef or turkey (for meatballs)
– 1/4 cup breadcrumbs
– 1 egg
– 2 tbsp milk
– 1 tsp garlic powder
– 1/2 tsp smoked paprika
– 2 cups mashed potatoes (homemade or store-bought)
– 1 cup BBQ sauce
– 1 cup shredded cheddar cheese
– Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, smoked paprika, salt, and pepper. Shape into small meatballs (about 1.5 inches).
3. Sear the meatballs in a skillet over medium heat until browned on all sides. Set aside.
4. Spread mashed potatoes evenly in the baking dish. Arrange the meatballs on top and drizzle BBQ sauce over them.
5. Sprinkle shredded cheddar cheese evenly over the dish.
6. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Broil for 2-3 minutes for a golden topping, if desired.
7. Serve hot with a side of roasted vegetables or a fresh salad.
