Ingredients
– 4 medium sweet potatoes
– 2 cups cooked, shredded chicken
– 1/2 cup BBQ sauce (your favorite brand)
– 1/2 cup sour cream
– 1/4 cup chopped green onions
– 1/4 teaspoon garlic powder
– 1/4 teaspoon smoked paprika
Instructions
1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place them on a baking sheet, and bake for 45-50 minutes, or until tender.
2. While potatoes bake, mix shredded chicken with BBQ sauce, garlic powder, and smoked paprika in a bowl. Heat through if necessary.
3. Once baked, slice each sweet potato down the middle and fluff the inside with a fork.
4. Divide the BBQ chicken mixture evenly among the sweet potatoes.
5. Top with a dollop of sour cream and sprinkle with chopped green onions.
6. Serve warm and enjoy!
