Baked Tortellini Alfredo with Spinach and Bacon: A Creamy, Cheesy Comfort Dish

Ingredients

– 12 oz cheese-filled tortellini (fresh or frozen)
– 4 slices bacon, cooked and crumbled
– 2 cups fresh spinach, wilted
– 1 1/2 cups Alfredo sauce (store-bought or homemade)
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 1 tbsp olive oil
– Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. Cook tortellini according to package instructions. Drain and set aside.
3. In a skillet, heat olive oil over medium heat. Add spinach and sauté until wilted. Season with salt and pepper.
4. In a large bowl, combine cooked tortellini, spinach, Alfredo sauce, and half of the mozzarella and Parmesan cheeses. Mix well.
5. Pour the mixture into the prepared baking dish. Sprinkle crumbled bacon and the remaining cheeses over the top.
6. Bake for 20-25 minutes, or until the cheese is melted and golden. Broil for an additional 2-3 minutes for a crispy cheese topping.
7. Serve hot, garnished with extra bacon bits or a sprinkle of parsley if desired.
